Our summer truffle is at leave to soak in a fat before cooking to let its aroma develop and then enjoy it to the fullest on the plate.
For example, incorporate it cut into thin slices in beaten eggs, then let the preparation rest in the refrigerator for about 2 hours, before cooking the omelet. This resting time allows the fat in the eggs to properly capture the scent of the truffle.
Also use it to make a sauce with crème fraîche or butter: in the same way, add your summer truffle in the crème fraîche or in the butter, then let the preparation rest in the refrigerator for about 2 hours, before heating your sauce.
Also known as Tuber aestivum or Saint-Jean truffle, or even summer white truffle, summer truffles have a smell of hazelnut, radish or even mushrooms. Thus, its flavor is closer to the mushroom than to the black truffle.
Keep in mind that in general, the truffle does not like to be heated too much, at the risk of losing its flavors: add our summer truffle, whenever possible, only at the end of your recipe.
If you are looking for an intense truffle scent like that of black truffle, we recommend that you prefer our preparation of summer truffle carpaccio, in which the note of black truffle is brought by extra virgin olive oil flavored with black truffle.
