Porcini Mushroom Risotto Preparation
Recipe for 5 people
Ingredients to add: 30g of butter, 15 cl of crème fraîche, 100 ml of white wine.
- Put the porcini mushrooms to rehydrate 15 min in 1 liter of warm water (hot tap water is suitable). Then take them out of the water, rinse them, and save them in a bowl.
- Heat 1 liter of water with the 2 tablets of broth, once to boil, reduce the heat and let simmer throughout the recipe.
- Melt the butter in a saucepan (preferably non-stick) 23 to 25 cm in diameter.
- Pour the rice, fry for 3 minutes over high heat, add the white wine, a ladle of hot broth, porcini mushrooms.
- Mix and when the rice has almost absorbed all the broth, start again fishy, ​​stir very often.
- Once the last ladle of bouillon absorbed, add the cream, stir one last time, cut the fire and salt at your convenience.
- Leave for a few minutes under cover and serve. You can add Parmesan cheese or grated cheese.
